Oyster Juice (3 Pints) Recipes
Creamy Oyster Stew
Ingredients:
- 1 pint Linton's Oyster Juice, thawed
- 1 pint fresh shucked oysters (with their liquor, if available)
- 4 tablespoons butter
- 2 cups whole milk
- 1 cup heavy cream
- 1 small onion, finely chopped
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon Old Bay or JO Seasoning
- Salt and black pepper, to taste
- Fresh parsley and oyster crackers, for serving
Instructions:
1. Sauté the onion: Melt butter in a large saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
2. Add the oyster juice: Pour in the pint of thawed Oyster Juice. Add Worcestershire sauce and seafood seasoning. Simmer gently for 5 minutes to develop the flavor.
3. Make it creamy: Reduce heat to medium-low. Stir in the milk and heavy cream. Heat gently, stirring occasionally. Do not boil.
4. Add the oysters: Gently add the shucked oysters and any reserved liquor. Cook for approximately 3–5 minutes, until the oysters are opaque and their edges begin to curl. For food safety, heat the stew to 145°F.
5. Season and serve: Add salt and pepper to taste. Ladle into bowls and garnish with fresh parsley. Serve with oyster crackers.
