Grilled Oysters with Garlic Herb Butter
Ingredients:
- 25 fresh oysters, in the shell, scrubbed clean
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1/2 teaspoon smoked paprika (optional)
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and black pepper, to taste
- 1/2 cup grated Parmesan cheese (optional)
- Lemon wedges, for serving
Instructions:
- Prepare the Garlic Herb Butter: In a small bowl, mix the softened butter with minced garlic, parsley, lemon juice, paprika, red pepper flakes, salt, and pepper. Optional: Mix in the grated Parmesan for extra richness. Set aside.
- Preheat the Grill: Preheat your grill to high heat (about 450°F/230°C).
- Shuck the Oysters: Using an oyster knife, carefully shuck the oysters. Remove the top shell, leaving the oysters on the half shell with their liquor. Discard any oysters that don’t close when tapped before shucking (these are dead and should not be eaten).
- Add Butter: Place about 1/2 teaspoon of the garlic herb butter on each oyster.
- Grill the Oysters: Arrange the oysters on a grill-safe tray or directly on the grill grates (shell-side down). Close the grill lid and cook for 5–7 minutes, or until the butter is melted, bubbling, and the oysters are just cooked through.
- Serve: Carefully remove the oysters from the grill using tongs. Serve immediately with lemon wedges on the side.
Optional Variations:
Spicy Kick: Add a dash of hot sauce to each oyster before grilling.
Breadcrumb Topping: Sprinkle panko breadcrumbs mixed with olive oil and parsley for extra crunch.
